The grapes started with a 3 day cold soak (after destemming and before inoculating) to allow gentle extraction of color without adding harsh tannins. The fruit started fermentation in our open stainless steel tanks, and was pressed before completion of fermentation to maintain more fruit aromatics. Juice went from the press pan to our large oak tank, used barrels, and stainless steel tanks. Full malolactic fermentation followed the completion of primary fermentation.
