The Fouch Vineyard is located about 1.5 miles south of our farm on Smokey Hollow Rd. Dan and Mary Ann Fouch planted 2 vineyard blocks in 2006 and 2009 totaling about 5 acres. The blocks have different soil profiles, slopes, and Riesling clones, which provide us with a unique blend of flavors and aromatics.
The grapes were crushed and allowed to soak for 24-30 hours of skin contact to enhance the aromatics. The must was divided between three stainless steel tanks, and each was inoculated with a different yeast strain to create different yet complementary fruit profiles. Fermentation in each tank was stopped at a different sweetness level, and the final blend was made in February 2017 prior to bottling.
