The green dots are back! And so is our lush, silky style of Pinot Grigio, with all the ripe pineapple, juicy pear, peach blossom, and full tropical fruit aromas and flavors that make this a summer staple. Time to pump up the slip 'n slide and listen for the ice cream truck!
Pinot Grigio is one of three white varieties we grow on our farm. We have a 1.5 acre block on the top of the hill right outside the tasting room and a 4.5 acre block on the southern section of the farm. The vines were planted in 2001 on predominantly clay and loam soils and run in a north-south direction to facilitate air flow, which minimizes frost and disease.
Our Pinot Grigio grapes are some of the first to be harvested and brought into the winery. They are fed into the crusher/destemmer and then go directly into the press to extract their juice. We utilized four stainless steel tanks for fermentation, with a different yeast strain used in each. Each tank was stopped with a different residual sugar level, and the final blend was created in February 2017.
