With so much of winemaking grounded in hard science, you’d be forgiven for thinking there wasn’t much room in the process for flights of pure imagination. Not so! In the case of this unique Rosé, we took Pinot Grigio juice that was hard pressed to the point of color extraction and added it to Pinot Noir skins from which most of the juice had already been extracted. The two elements were co-fermented, pressed a final time after fermentation was nearly complete, and allowed to age for 3 months in neutral French oak.
