The grapes for the Sparkling Pinot Grigio are grown on Leonard Ligon's farm, about one mile west and just a little north of the 2 Lads property.
The grapes were whole cluster pressed, sent into our stainless steel tanks, then left to settle for a few days. The juice was inoculated with yeast and completely fermented. The wine was bottled in February 2017 to undergo secondary fermentation, then allowed to sit en tirage for 7-10 months. The bottles were riddled for about 2 weeks prior to disgorging and dosaging to a finished brut style.
